7 Healthy Recipes for Summer

According to a survey, 7 in every 10 adult wants to adopt a healthy diet. And since summers are here, let me show you some incredible dishes that you can try out without worrying about your diet. Let’s begin:

1. American macaroni salad

There’s always time for pasta. While winters call for one-pot hot macaroni, summers can actually use a chill-out version of the classic mac and cheese. This is one of the easiest dishes you can prepare and expect it to keep you for long hours.

To get started, first in a large bowl take your boiled macaroni, chopped onions, capsicum, carrots, corn, parsley, and tomato (if you want). In another bowl, put mayonnaise (loads of it), mustard, sugar, vinegar, sour cream, and salt.

Whisk the mixture after spraying salt and pepper to taste. Now, pour the dressing over your macaroni bowl, and it’s ready. You can even store the mixture in the refrigerator for the next 2-3 days and enjoy.

2. Middle eastern chicken burgers

Tell me a better combination than chicken and burgers, I’ll wait.

This recipe is all you need to make your summers good and fresh. Let’s start by sauteing some onions, cinnamon, coriander, pepper flakes, garlic, ½ teaspoon kosher salt, pepper in olive oil. Wait till the onions are soft and the garlic gives you a fragrance.

Now, take them off from the pan and let them cool. On another plate put chicken pieces and put yoghurt in the onion mixture over them. Mix them evenly and shape them into patties.

Take the pieces and grill them in a non-stick skillet until they are brown and nicely cooked through (about 5 mins each).

Place them over freshly toasted buns, with chopped onions, mayonnaise, and lettuce, and munch on the deliciousness…

3. Grilled chicken with the peach glaze

Can there be a healthy recipes list without chicken? This recipe is full of protein and just so delicious. For starters, combine peach preserves, soy sauce, mustard, garlic, olive oil, and jalapeno, in a medium bowl and season with salt and pepper.

Now, preheat the grill and brush the chicken pieces with some olive oil, salt, and pepper.

Place the chicken on the grill and let both sides cook nicely. Brush the chicken pieces with peach glaze and there you go… your tasty chicken is ready to be stuffed inside your mouth.

4. Grilled shrimp

Do you also love to eat shrimp all summer? Then you have to try out this recipe. It’s easy to make and you can serve a good amount of people only by making it one time.

In a large bowl, toss prawns, olive oil, lemon juice, salt, and pepper. Marinate it for a few hours and grill it up until they turn pink, which is about 5 mins, depending on the size.

Remove the peel and pith from the limes and cut between the membranes to remove the segments. Put these supremes into a bowl and add the membrane juice. Season with salt, pepper. Plate the warm shrimp with the salsa on the side and just enjoy.

5. Confetti corn

You cannot go wrong with corn recipes during summers. They are nutritious, full of fibre, and tasty too. To make this, heat olive oil in a pan and saute onions until they are soft, then add the tossed bell pepper of your choice and saute for another 2 mins.

In another pan, put the butter and allow it to melt, then add your corn, salt, and pepper and let it cook. Stir occasionally for 5 to 7 mins, till it becomes soft, then add the onions and saute for about 2 mins.

Serve it in a large bowl and just munch it on.

6. Watermelon strawberry sangria

Burger making you thirsty? Don’t worry, I have got you covered with this delicious, summer drink that will keep you fresh to the core. For this drink, you will need only two fruits, watermelon, and strawberries,

Take both of them and blend them into a smooth paste. Add a splash of vodka, if you need to get the fruits pureed.

Take the puree and strain it into a large pitcher. Add rose, vodka orange juice, and liqueur.

Now, add orange and lime slices and refrigerate for at least 1 hour before serving. You would not be able to get enough of it.
