CHIANG MAI – A popular Bakery in Chiang Mai has responded quickly after a customer left a one-star review for their signature “4-Cheese Pretzel,” claiming the cheese was mouldy. The bakery clarified that the cheese in question is actually blue cheese, an imported high-quality variety from Italy often called the “angel of blue cheese.”
The owner asked customers to understand the ingredients used and requested that the reviewer update or remove the comment, as the negative post has affected the shop’s reputation. The bakery confirmed they have no intention to pursue legal action.
The incident became a hot topic on social media. The customer had posted a photo on Google Maps, rating the food just 1 out of 5 due to hygiene concerns, claiming the cheese had mould.
The customer said, “Four cheese pretzel has mould, shows a lack of cleanliness during preparation, very disappointed, not trying to cause drama, the bread was fine but the cheese had mould by the second day in the fridge, it shows poor hygiene in how you make the bread and cheese” and rated the service and atmosphere 3 and 4 out of 5.
After seeing the post, the bakery responded on its own social media. They explained that the 4-Cheese Pretzel features mozzarella, edam, parmigiano reggiano, and gorgonzola, which is a blue cheese known for its blue veins and strong taste.

These cheeses are listed on the sign in the shop. The blue patches are not mould from spoilage but are a key part of the blue cheese. They also assured customers that they follow strict cleanliness during preparation and offered to show videos of the process on request.
Many people on social media chimed in to support the bakery and clear up the confusion, with most backing the shop and complimenting the quality of their products.
The shop’s owner, Chintaphatchaya Chokphaiboon, said they tried to contact the customer who posted the review, but could not reach them and had to respond via the shop’s Facebook page. They wanted other customers to understand the situation to protect the shop’s reputation.
Even though the 4-Cheese Pretzel is one of their best-sellers, sales dropped after the post, so they felt it was necessary to clarify the facts. They said they always use top-quality ingredients and place a high value on hygiene at every step.
The 4-Cheese Pretzel combines four types of cheese: Mozzarella, Edam, Parmigiano Reggiano, and Gorgonzola. Gorgonzola is a premium Italian blue cheese celebrated for its distinctive blue veins and complex flavour, not spoilage.
The bakery repeated that they have no plans to take legal action. They just hope the customer understands and will consider removing the review to prevent any further damage to the shop’s reputation. Most regulars continued to praise the shop for its quality, cleanliness and taste, with many still eager to try the pretzel themselves.
